morsels mediumIt takes more than a wedge of iceberg lettuce and some ranch dressing to get PieHole excited about a salad.

Sure, anyone can pile on a few slices of grilled rib-eye to make a salad that’s worth eating. But that’s taking the easy way out.

Around the Green, we’ve had a couple of memorable salads that didn’t need to bring steak into the equation. The winter root vegetable salad that we once had at Dish Restaurant in Red Bank stands out because it’s a plate full of vegetables that you don’t often come across – paper thin celeriac and shaved fennel, anyone? – paired with a great citrus dressing.

The other is the excellent chicken, broccoli and caramelized walnut salad from Red Bank’s Front St. Trattoria.

Valpone_EatingCleanAmie Valpone was a healthy woman in her early 20’s when a cascade of ailments began, taking her to the brink of death.

Battling numerous diseases and beyond the help of conventional medicine, Valpone said she spent most of the following decade curing herself through better eating — and clearing her body of toxins.

Red Bank Flavour, a grassroots culinary campaign driven by the borough’s top chefs, restaurateurs and proprietors, will tempt foodies to flirt with their senses this holiday season at the third annual Holiday Flavour event.

Slated for December 4, 2014 at The Molly Pitcher Inn, Holiday Flavour will invite guests to sip and sample an array of libations (from Ketel One, Johnny Walker, Baileys, and Rook) and cuisine from more than twenty of Red Bank’s most popular restaurants and eateries. In addition to the tasting, the charitable evening will include live music, a Santa’s grab bag featuring donations from Red Bank retailers, a tree lighting and a fabulous winter wonderland outside on the hotel’s beautiful waterfront promenade.

A portion of the proceeds will benefit the Parker Family Health Center, a health care facility where Monmouth County residents who do not have medical insurance or ability to pay for medical care can be treated.

SHREWSBURY: HONORING ONE TO HONOR ALL

Shrewsbury’s Michael Aufiero was balancing two careers – restaurateur and woodworker – a few years back when his lifelong best friend, Johnny Schwarz, called him with a request.

Schwarz heads up a World War II veterans’ organization, the U.S.S. Houston (CA-30) Survivors Association, founded by his late father. He was overseeing the refurbishment of the original scale-replica of the ship, a heavy cruiser that was sunk by the Japanese in the early days of World War II. The replica would be donated to the the National Museum for the United States Navy in Washington. It needed a display case. Would Aufiero build it?

Aufiero, who owns Red Bank’s Front Street Trattoria with his wife, Valerie, was reluctant to take on the task. His wood shop was about mantelpieces and wall units for home entertainment systems, not something as freighted with meaning as this.

But Aufiero had known Otto Schwarz, and knew his story: how he had survived 20 hours in the sea as the Japanese machine-gunned the water; his three-and-a-half-year ordeal in a prison-of-war camp in Burma as a member of the slave labor contingent depicted in “The Bridge on the River Kwai;” the horrific beatings he endured in a camp in Saigon.

Aufiero felt an obligation to honor both Schwarz and the sailors who had served with him.

“There’s not a lot of men I look up to in my life,” Aufiero said. “He was one of them.”

The opening of an exclusive major exhibition of paintings by an internationally acclaimed artist would be a feather in the cap of any town — and an absolute must for a cranny of culture that was ranked third on Smithsonian Magazine’s list of the 20 Best Small Towns in America.

A feather goes to Red Bank, then, for landing HEADS, an ongoing, open-air (and in-your-face) “observation of the individual spirit” that takes to the borough’s exterior walls from these dog-star days of August to the harvest-moon evenings of early autumn.

Red Bank Flavour, a culinary campaign driven by the borough’s restaurants and food stores, presents “A Night on the Navesink: A Flavour Summer Soiree” at the Molly Pitcher Inn on Thursday, August 16.

Held at Red Bank’s newly renovated riverfront hotel, the evening, co-sponsored by hotel owner J.P. Barry Hospitality, will offer guests culinary samplings from more than 20 borough eateries, as well as wine samplings, libations and craft beer selections from New Jersey breweries.

A portion of proceeds from “A Night on the Navesink” will benefit Lunch Break and the Red Bank Middle School Athletics Foundation.

‘FLAVOUR’ TO TEASE TASTE BUDS AND MORE

A restaurant-and-bar-led consortium has rolled out a multi-front web marketing campaign to boost Red Bank’s profile as a cultural destination.

Dubbed Red Bank Flavour, the campaign’s aim is to resharpen the town’s dulled edge as Monmouth County’s go-to place for dining and nightlife, a distinction it lost in recent years with the rise of Pier Village in Long Branch and the two-fisted resurgence of Asbury Park’s downtown and boardwalk.

“It’s about bringing people back to Red Bank, and letting people know that we’re still very vibrant,” says Valerie Aufiero of Front Street Trattoria.

Asbury Park and Pier Village in Long Branch have been eating off Red Bank’s plate for too long.

That’s the message from a group of borough restaurant owners who have banded together in an effort to recapture a bigger piece of the Monmouth County dining-out pie.

After three years of slow build-up, the no-name group is ready to bust out of the Red Bank RiverCenter crib with its own marketing effort aimed at bringing some sizzle back to the downtown.

“Red Bank has really fallen behind,” says red and the Downtown owner Dan Lynch. “We have a really great grouping of restaurants that needs to be showcased.”
