091714 ferrando ravioli lighterLike movie stars who return to their roots by taking a role in a Broadway play or indie film, experienced chefs sometimes also need to revive themselves.

For chef Anthony Ferrando, a partner in the restaurant Dish in Red Bank, that means returning to the kitchen, where many of the routine tasks have been taking up by helpers, to do more inspired cooking. It also means means bringing together raw ingredients to form a recipe.

“I have a great kitchen staff here,” Ferrando said. “My sous chef, John Bonilla, has been with me for nine years, and Antonio Comacho started here as a dishwasher and is now in charge of the grill. They know what to do. They can run this kitchen.”

“There are going to be some great changes here, though,” he added in the next breath.

BASIE HOSTS TWO RIVER PRIDE EVENT

On the evening of Tuesday, June 10, the Count Basie Theatre will be the setting for Two River Pride, an annual Pride Month gathering that was created for LGBTQ youth and their allies — and that centers on LGBTQ history and celebration, by giving specific voice to area youth.

The event represents a partnership between local civic, cultural, and community leaders and groups, including Red Bank Councilman Ed Zipprich, Make It Better for Youth and others. Red Bank Mayor Pasquale Menna will attend, to deliver a proclamation in recognition of Lesbian, Gay, Bisexual and Transgender Pride Month. This year’s event will also feature live music, a sampling of wares from some of Red Bank’s food purveyors, and screenings of three acclaimed shorts from young filmmakers.

We sat down with chef Anthony Ferrando of Dish, on White Street, to ask if he might suggest a few interesting meals for the home cook. We ended up getting that and a whole lot more, including some insights into his favorite food stops in town.

RED BANK RESTAURANTS PLAN PUSHBACK

Asbury Park and Pier Village in Long Branch have been eating off Red Bank’s plate for too long.

That’s the message from a group of borough restaurant owners who have banded together in an effort to recapture a bigger piece of the Monmouth County dining-out pie.

After three years of slow build-up, the no-name group is ready to bust out of the Red Bank RiverCenter crib with its own marketing effort aimed at bringing some sizzle back to the downtown.

“Red Bank has really fallen behind,” says red and the Downtown owner Dan Lynch. “We have a really great grouping of restaurants that needs to be showcased.”

TIMES CHIMES IN ON DISH

Dish, a restaurant on White Street in Red Bank, scored a positive review in the Metropolitan section of the New York Times Sunday.

Food critic Karla Cook, however, had some issues with the ventilation system and a door chime.
