With a due date of Christmas Eve, parents-to-be Kristin and John Pallonetti have a lot more to look forward to than their next meal.
Still, when those cravings kick in, the Fair Haven couple respond, often heading into Red Bank for custom omelets at the Inbetween Café.

For Kristin, an attorney, the hankering can only be satisfied by an Inbetween omelet made with egg whites, caramelized onions and cheese.
“I’ve been craving crunchy things like tacos and salads, but I look forward to having this omelet every week,” she tells PieHole. “Over the years I would get different things, but since I became pregnant, I only get this.”
John has also made adjustments to his diet this year. Diagnosed with Celiac disease, he’s been on a gluten-free regimen. “I like mainly the specials. The meats here are great, but I ordered a California omelet made with egg whites, no cheese and extra bacon,” he tells us.
“We’ve eaten out and tried a lot of different foods through the pregnancy,” he says. “We even tried Ethiopian food in Long Branch, but Kristin’s real craving has been chicken nuggets from the Acme.”
“Yeah, I haven’t been able to eat chicken since I became pregnant,” says Krisin. “Except for the nuggets. They have been my junk food crave.”
The Inbetween Cafe, located in English Plaza, is open every day from 7 a.m. to 3 p.m. for breakfast and lunch.Â
