CHEESE: IT’S WHAT’S FOR… SUPPER?
In conversation on a sweltering day a few weeks back, Steve Catania, owner of The Cheese Cave on Monmouth Street in Red Bank, casually mentioned what a nice, light, summer dinner cheese makes.
Really? Cheese for dinner, redbankgreen asked?
Absolutely, the cheese maven replied. A platter of cheese, plus a few nuts or pieces of fruit and perhaps a glass of wine, and you’re set with a simple and nutritious meal.

My wife and I went to the Cheese Cave’s Friday Night $5 Cheese Tasting last weekend and really enjoyed ourselves. It was very pleasant and casual. Steve and the young lady (who’s name I can’t remember) were the perfect hosts. We grabbed a bottle of wine across the street and sampled about 9 different cheeses accompanied by pate, walnuts, bread and pickled onions.
I’m not a “cheese person” and consider my palate very limited, but thoroughly enjoyed this sampling. We had a good time and look forward to going again.
